👩🏽‍🍳 Method

1. Sear the Shanks

Heat oil in a large pan over medium-high heat. Once hot, add the lamb shanks and brown them on all sides, about 3–4 minutes per side. You’re aiming for a deep golden crust to lock in all that flavour.

Transfer the browned shanks to a large ovenproof casserole dish.

2. Build the Curry Base

Scatter the baby potatoes and chopped onion around the lamb in the dish.
In a separate jug or bowl, combine:

  • 200ml coconut milk
  • 1 cup boiling water
  • Chicken stock concentrate
  • Curry paste
  • Paprika, pepper, chilli powder, salt, and cinnamon clove

Stir to combine, then pour the mixture over the lamb and vegetables. Make sure the shanks are mostly submerged in the sauce.

3. Slow Cook to Tenderness

Cover with foil or a lid and bake in a preheated oven at 170°C (340°F) for 2½ to 3 hours. The lamb should be falling off the bone and the potatoes soft. Remove the foil for the last 30 minutes if you’d like to reduce the sauce slightly.

🍚 Serving Suggestions

Serve the lamb shanks as-is or with:

  • Steamed jasmine rice
  • Garlic naan or roti
  • A quick cucumber and mint salad to balance the heat

Spoon over that creamy, golden sauce generously — it’s the star of the show.
